Coconut Lemon Curd

Coconut Lemon Curd is perfect for spring!
Ingredients
- 2/3 cup lemon juice
- 2 large eggs
- 6 egg yolks
- 1 cup sugar
- 3 tablespoons coconut oil
- 1 tablespoon butter
- 1/4 teaspoon vanilla extract
- 2 tablespoons heavy cream or full-fat coconut milk (cooking variety)
Instructions
- In a medium saucepan, combine the lemon juice and sugar. Heat over medium until just simmering, then reduce heat to low.
- Whisk the whole eggs and egg yolks in a medium bowl until smooth. Slowly pour about half of the hot lemon mixture into the eggs while whisking vigorously to temper them.
- Pour the tempered egg mixture back into the saucepan.
- Cook over low heat, whisking constantly, until the curd thickens and coats the back of a spoon, about 5–10 minutes. If using a candy thermometer, it should reach roughly 170°F.
- Remove from heat and stir in the coconut oil and butter, one tablespoon at a time, followed by the vanilla extract and the heavy cream or coconut milk.
- Let the curd cool to room temperature, then transfer to an airtight container and refrigerate. Stored properly, it will keep for about a week.
