Ingredients
1 lb shrimp
1 tablespoon butter
1 yellow onion, diced
1 bell pepper, diced
5 green onions (scallions) — reserve the green tops for garnish
1 teaspoon minced garlic
Seasonings to taste: Tony’s or Old Bay, garlic powder, cayenne pepper, blackened seasoning
1 cup chopped fresh parsley
1 can evaporated milk
⅓ cup (80 ml) half-and-half
¾ cup (about 75 g) Romano cheese, grated
1 drained can roasted diced tomatoes
A splash of white wine
Instructions
1. In a large skillet, melt the butter over medium heat. Add the diced yellow onion, bell pepper and the white parts of the green onions. Sauté until the vegetables are softened.
2. Add the minced garlic near the end of the sauté and stir briefly. Season the vegetables with Tony’s or Old Bay, garlic powder, cayenne, blackened seasoning and most of the chopped parsley, reserving a little parsley for garnish.
3. Add the shrimp to the skillet. When the shrimp start to turn pink, pour in the evaporated milk and the half-and-half. Stir to combine and bring the mixture to a gentle simmer.
4. Stir in the Romano cheese and the drained roasted diced tomatoes. Add a splash of white wine and the reserved green parts of the scallions. Allow the sauce to warm through and thicken slightly. Serve over angel hair pasta, rice, or spooned over baked fish. Garnish with remaining parsley and the scallion greens. Enjoy.
