No-Bake Oatmeal Granola Bites for Quick Healthy Snacks

What I love most? Lazy weekends spent at home with my husband and our two dogs. We didn’t do much on Saturday beyond watching movies, and Sunday I baked while catching more TV (and some football). The dogs were happy to lounge with us — which, to be honest, they do every day!

I wanted a simple recipe that matched the lazy weekend vibe. I had made granola bars before, so this time I decided to switch things up and make no-bake granola bites — no oven required!
Quick and easy — perfect for a relaxed day.

These bites can be kept at room temperature, but I strongly recommend refrigerating them. Chilled, they hold together better and taste even more satisfying. I hope you had a relaxing weekend too!

No Bake Granola Bites

Yield:
30 balls

Ingredients

  • 3/4 cup creamy peanut butter
  • 1/4 cup light corn syrup (Karo Lite)
  • 1/2 tsp vanilla
  • 2 cups granola (I used dark chocolate almond granola)
  • 1/2 cup oats
  • 1/2 cup rice krispies
  • 1/2 cup chocolate chip morsels

Instructions

Place the peanut butter in a microwavable bowl and heat for about 30 seconds, or until softened and easy to stir. Mix in the light corn syrup and vanilla, then set the mixture aside.

In a large bowl combine the granola, oats, rice krispies and chocolate morsels. Mix by hand to distribute the ingredients evenly. Gradually pour in the peanut butter mixture and continue mixing with your hands until everything is well coated.

Chill the combined mixture in the refrigerator for at least 20 minutes. Use a spoon or cookie scoop to portion the mixture, then shape into compact balls with your hands so they hold together. Place the formed bites on parchment paper.

Store the granola bites in an airtight container in the refrigerator for best texture and flavor.
