Ingredients

  • for the cookie dough
  • 1 heaping cup all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ stick 6 tablespoons unsalted butter, melted
  • ½ cup packed brown sugar
  • ¼ cup white sugar
  • ½ teaspoon vanilla extract
  • 1 egg
  • 1 cup chocolate chunks
  • about 30 marshmallows
  • 4-5 cinnamon graham crackers

Instructions

  • Preheat the oven to 350°F (175°C). Spray an 8-inch cast iron skillet with nonstick spray.
  • Break the graham crackers into large pieces and arrange them in a single layer across the bottom of the skillet.
  • Make the cookie dough: in the bowl of a stand mixer fitted with the paddle attachment, beat together the melted butter, brown sugar, and white sugar until creamy and combined.
  • Add the egg, then the vanilla and salt, mixing until incorporated.
  • Stir in the flour and baking soda until a soft dough forms, then fold in the chocolate chunks.
  • Spread or press the cookie dough evenly over the graham cracker layer in the skillet.
  • Bake for 35–40 minutes, until the cookie is set but the top appears dry.
  • Remove the skillet from the oven, arrange the marshmallows in a single layer over the cookie, and return to the oven for about 5 minutes until the marshmallows are golden and gooey. Serve warm.
