s’mores chocolate chip skillet cookie
Ingredients
- for the cookie dough
- 1 heaping cup all-purpose flour
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ¾ stick 6 tablespoons unsalted butter, melted
- ½ cup packed brown sugar
- ¼ cup white sugar
- ½ teaspoon vanilla extract
- 1 egg
- 1 cup chocolate chunks
- about 30 marshmallows
- 4-5 cinnamon graham crackers
Instructions

Preheat the oven to 350°F (175°C). Spray an 8-inch cast iron skillet with nonstick spray.

Break the graham crackers into large pieces and arrange them in a single layer across the bottom of the skillet.

Make the cookie dough: in the bowl of a stand mixer fitted with the paddle attachment, beat together the melted butter, brown sugar, and white sugar until creamy and combined.

Add the egg, then the vanilla and salt, mixing until incorporated.

Stir in the flour and baking soda until a soft dough forms, then fold in the chocolate chunks.

Spread or press the cookie dough evenly over the graham cracker layer in the skillet.

Bake for 35–40 minutes, until the cookie is set but the top appears dry.

Remove the skillet from the oven, arrange the marshmallows in a single layer over the cookie, and return to the oven for about 5 minutes until the marshmallows are golden and gooey. Serve warm.
