I love these muffins because the Greek yogurt boosts the protein without sacrificing flavor.

I make this recipe regularly—it’s simple, reliable, and one of my favorites.

Including protein with a carb-rich snack helps me keep blood sugar steadier, and these muffins deliver that balance in a delicious way.

The batter comes together in one bowl, making this an easy recipe to prepare. They’re also great to pack in a lunchbox or enjoy as a quick snack.

Muffin ingredients

  • Greek yogurt – Full-fat or 2% work well; non-fat may also be fine.
  • Melted butter – You can substitute grapeseed or olive oil (olive oil gives a noticeable flavor).
  • Maple syrup
  • Egg
  • Vanilla extract
  • Whole grain flour – Whole wheat, spelt, or barley flour all work; I like barley flour.
  • Baking powder
  • Baking soda
  • Sea salt
  • Chocolate chips or chopped chocolate
