Use up the crumbs at the bottom of the Weetbix box with these healthy Apple Weetbix Pikelets. They’re ideal for kids’ lunchboxes or as an after-school snack.

Saving those last Weetbix crumbs isn’t over-the-top frugal — it’s practical and reduces food waste. Using already-crushed Weetbix also saves time and effort when baking, though I admit crushing can be oddly satisfying sometimes.
These pikelets are basically mini pancakes with a bit more texture. Pikelets traditionally have a thicker batter and are often slightly sweetened, but this recipe keeps added sugar to a minimum. The natural sweetness from chopped apple and a hint of cinnamon is enough for a tasty, wholesome snack. If you prefer a sweeter result, stir in a spoonful of sugar or some sultanas.
The batter stores well: you can keep cooked pikelets for a few days in an airtight container in the fridge, or hold the prepared batter chilled and cook fresh pikelets when you want them. They’re perfect plain, or served as a sandwich with jam, peanut butter or honey. For an afternoon treat, serve with a dollop of yoghurt and a drizzle of honey.

Ingredients
- 1 cup wholemeal flour
- 1 1/2 cups crushed Weetbix
- 2 tsp baking powder
- 2 tsp cinnamon
- 1 egg
- 2 Tbsp melted butter
- 1 1/2 cups milk (more if needed)
- 2 apples, finely chopped
Instructions
- Combine the wholemeal flour, crushed Weetbix, baking powder and cinnamon in a bowl.
- Whisk the egg, melted butter and milk together, then stir into the dry mixture until just combined. Add more milk if the batter is too thick. Fold in the finely chopped apples.
- Heat a non-stick pan over medium heat and melt a little butter. Drop tablespoon-sized dollops of batter into the pan, leaving space between each pikelet.
- Cook until bubbles form and the underside is golden, then flip and brown the other side. Repeat with the remaining batter.
- Serve warm with your favourite toppings: jam, peanut butter, honey, or yoghurt with a drizzle of honey for a simple treat.
