Smoked Turkey Pot Pie: Rustic Comfort Food with Flaky Crust

This Smoked Turkey Pot Pie is a longtime favorite I’ve made in the oven for years. Recently I smoked the turkey the day before and used it in this pie—the extra smoke flavor was fantastic. Turning classic comfort foods into smoked versions has become one of my favorite ways to cook.

I cooked this on a Pit Boss Pro 1100 pellet grill, which makes a great oven for adding smoke to comfort dishes. A pellet smoker or a conventional oven both work well; the smoker simply adds a nice smoky note to the crust and filling.

Smoked Turkey Pot Pie Recipe Ingredients:

  • Cooked turkey – shredded leftover smoked turkey works perfectly; use white or dark meat.
  • Pie crust – store-bought or homemade. One for the bottom (unless using cast iron) and one for the top.
  • Frozen peas and carrots
  • Cream of chicken soup
  • Cream of potato soup (or cream of mushroom/celery as alternatives)
  • Egg – for egg wash
  • Garlic salt and black pepper – to taste

How To Make Smoked Turkey Pot Pie:

If you plan to smoke the whole pie, clean your smoker well first to avoid flare-ups from leftover grease. I cold-smoked mine for an hour, then increased heat and had to finish in the oven due to a flare-up. Even so, the finished pie had great smoke flavor.

Prepare the turkey. Smoke a turkey ahead of time, then shred about a pound of meat for this recipe—leftovers from a holiday bird are ideal.

Prepare the crust. Grease a pie plate and lay one pie crust in the bottom. If using a cast iron pie plate, omit the bottom crust and use only a top crust.

Make the egg wash. In a small bowl, beat the egg with a fork. Use a pastry brush to brush a thin layer of egg onto the bottom crust (and reserve some for the top).

Mix the filling. In a bowl combine shredded turkey, frozen peas and carrots, the cream soups, and season with garlic salt and black pepper. Adjust the ratios to reach a creamy, well-coated filling.

Assemble the pie. Pour the filling into the prepared bottom crust. Lay the second crust over the top, crimp the edges to seal, and cut four slits from the center outward to vent steam. Brush the top with the remaining egg wash.

Bake in the oven. Preheat the oven to 350°F and bake the pie for 45 to 60 minutes. For a golden top, increase the heat to 390°F for the final 15 to 25 minutes, watching closely to avoid burning.

Cook on the smoker (optional). If using a pellet smoker, start with a smoke setting for about an hour to impart smoke flavor, then raise the temperature to 350°F to finish cooking. Use any pellet flavor you prefer; mesquite and fruit blends work well together. Watch for hot spots and rotate the pie as needed.

Finish and serve. Remove when the crust is golden and the filling is bubbly. Let cool slightly, then slice and enjoy.

How To Store Leftover Pot Pie

Store leftover pot pie in the refrigerator for up to three days. Place slices in an airtight container or wrap the pie tightly with plastic wrap or aluminum foil.

Reheat individual slices in the microwave, or warm the whole pie in the oven or on the pellet grill until heated through. Reheating in the oven or grill helps preserve a crisp crust.
