Tortellini Chicken Caesar Salad Recipe with Creamy Dressing

This might be the easiest meal you’ll make—thank you, Costco!

I first saw this Tortellini Chicken Caesar Salad years ago on Instagram and it’s pure genius. If you keep the ingredients on hand, it really takes about 10 minutes: cook the pasta, chop the chicken, toss everything together, and you’re done. Quick, delicious, and satisfying.

WHAT YOU WILL NEED:
• Rotisserie chicken, chopped into bite-sized pieces.
• Caesar salad bag mix (I typically use two-thirds of the lettuce and all of the dressing from my large Costco bag; I skip the croutons).
• Cheese tortellini (cook the amount you prefer).
• Chopped tomatoes.

Cook the tortellini according to package instructions. Cut the chicken into bite-sized pieces. Combine the cooked tortellini, chopped chicken, Caesar salad mix (with dressing), and tomatoes in a large bowl. Toss gently until everything is evenly coated and serve immediately. Enjoy!
