  • Mascarpone cheese — for authentic flavor and texture. In a pinch, cream cheese can be used, but the taste and texture will be slightly different.
  • Icing (confectioners’) sugar — helps produce a smooth, lump-free dip.
  • Instant espresso powder — the essential coffee flavor; it’s concentrated and dissolves easily.
  • Cocoa powder — used in the mixture and for dusting the tops.
  • Whipping (double) cream — fresh cream whipped to soft peaks gives lightness and structure.

Ingredients

  • 16 oz container mascarpone cheese, softened
  • 2 tbsp confectioners’ (icing) sugar, for the cheese mixture
  • 1 tbsp cocoa powder, plus extra for sprinkling
  • 2 tbsp instant espresso powder
  • 1 pint whipping or double cream
  • 3 tbsp confectioners’ (icing) sugar, for the whipped cream
  • 1/2 tsp vanilla extract

Instructions

  1. In a bowl, beat the softened mascarpone cheese with 2 tablespoons of confectioners’ sugar, the cocoa powder and the instant espresso powder until smooth and well combined.
  2. In a separate bowl, whip the cream with the remaining 3 tablespoons of confectioners’ sugar and the vanilla extract until soft peaks form.
  3. Gently fold most of the whipped cream into the mascarpone mixture, leaving a small amount for topping. Fold just until combined to keep the dip light and airy.
  4. Divide the dip into small serving glasses or a serving bowl. Add a small dollop of the reserved whipped cream on top and dust with additional cocoa powder.
  5. Serve with Italian ladyfingers, biscotti, cookies, or fruit for dipping.

Notes

This dip can be made several hours ahead and kept covered in the refrigerator; add the decorative cream topping and cocoa dusting just before serving. If you prefer a stronger coffee flavor, dissolve the espresso powder in a teaspoon of hot water before adding.
