Sweet and Salty Pretzel No-Bake Cookies

Ingredients
- 1/2 cup unsalted butter
- 2 cups granulated sugar
- 1/2 cup milk
- 3 T. unsweetened cocoa powder
- 1 cup thin pretzels, crushed
- 1 3/4 cups quick cooking oats
- 1/2 cup creamy peanut butter
- 1 tsp. vanilla extract
Instructions
- Place a couple of handfuls of pretzels in a zip-top bag and crush them with a rolling pin until they reach the size you prefer.
- Measure the pretzels, oats, and peanut butter and have them ready. Lay out a strip of wax or parchment paper for the cookies to cool on.
- In a large saucepan, combine the butter, sugar, milk, and cocoa powder. Heat over medium, stirring until everything melts and becomes a smooth liquid.
- Bring the mixture to a boil, then set a timer and continue boiling for 2 minutes, stirring occasionally.
- When the 2 minutes are up, remove from heat and quickly stir in the crushed pretzels, oats, peanut butter, and vanilla until evenly combined.
- Use a large cookie scoop to drop portions onto the wax paper. Allow the no-bakes to cool and set for 10–15 minutes; they should lift cleanly from the paper once firm.
