Now for the recipe. I love serving granola at brunch because it’s easy to make ahead, self-serve friendly, and lighter than pastries alongside an egg dish. Set out milk or yogurt and fresh fruit and let guests build parfaits.
This Mocha Nut Granola showcases several BrunchWeek sponsors: gluten-free oats from Bob’s Red Mill, California walnuts, Pacari cocoa nibs and vanilla from Nielsen-Massey. The granola is naturally sweetened with honey and rounded with a hint of instant coffee for a mocha note. I stir in cocoa nibs at the end for crunchy chocolate flavor — coffee and chocolate are always a winning start to the day.
My favorite way to enjoy it is with plain whole-milk Stonyfield yogurt and sliced bananas, though it’s also delicious with almond milk or by the handful.

Mocha Nut Granola #BrunchWeek

Ingredients
- 3 cups old fashioned oats
- 2 tablespoons ground flaxseed
- 1/2 cup chopped walnuts
- 1/2 teaspoon salt
- 1 tablespoon instant coffee granules
- 2 tablespoons unsweetened cocoa powder
- 3 tablespoons coconut oil, melted
- 2 tablespoons honey
- 1 teaspoon pure vanilla extract
- 3/4 cup cocoa nibs or mini chocolate chips
Instructions
- Preheat oven to 325°F (160°C).
- In a large bowl combine oats, flaxseed, walnuts, salt, instant coffee and cocoa powder.
- In a smaller bowl whisk together melted coconut oil, honey and vanilla.
- Pour wet mixture over dry ingredients and stir until evenly coated.
- Spread the mixture on a parchment-lined baking sheet in an even layer.
- Bake for 30–35 minutes, stirring every 10 minutes so the edges don’t burn and the granola browns evenly.
- When the granola is golden, remove from the oven.
- Let cool for about 5 minutes, then stir in cocoa nibs or chocolate.
- Allow to cool completely so clusters form.
- Store in an airtight container and enjoy with yogurt, milk or fresh fruit.
