Ingredients

  • 9-inch graham cracker crust
  • 1 can sweetened condensed milk
  • ½ cup key lime juice
  • 8 oz softened cream cheese
  • ¾ cup whipping cream
  • 1 tablespoon key lime zest
  • 1 to 1½ cup mashed fresh mango
  • 8 oz Cool Whip topping (container)

Instructions

  1. In a medium bowl, beat the sweetened condensed milk and key lime juice until slightly thickened.
  2. Cut the softened cream cheese into cubes and add to the bowl.
  3. Beat until the mixture is very smooth and uniform.
  4. Add the whipping cream and beat on high for 3–4 minutes until very thick; beat longer for a firmer texture.
  5. Fold in the key lime zest and mashed mango until well combined.
  6. Place the pie crust on a cookie sheet. Pour the filling into the crust and smooth the top with a spatula.
  7. Cover with plastic wrap or the pie crust’s lid.
  8. Refrigerate overnight or freeze until set.
  9. Before serving, spread the Cool Whip over the chilled pie or pipe it on. Garnish with fresh mango slices, key lime slices, mango sauce, or extra lime zest.
  10. Makes about 8–12 servings depending on slice size.
