Weekly Dinner Plan: April 12–18, 2021 Menu Guide

I had a lovely week with my family on Long Island. Easter was simple and just right: a relaxed meal, plenty of spring vegetables, and good company. It was a refreshing break, and now I’m back to my regular routine. I’ll be doing my Instagram LIVE on Monday at 5:00 pm — I’ll try to have Hubs join me. In May I’ll repeat Entertaining with Ease and may bring back Plant-Based 2.0. Here’s your dinner planner for the week:

Meatless Monday: Poblano potato leek soup, quesadillas (swap avocado for cheese or use your favorite vegan cheese to make them vegan), served with leftover roasted or sautéed vegetables.

Tuesday: Slow cooker chicken tacos (make extra for Wednesday’s Not-Fried Rice), tortillas, cilantro-lime slaw (save about 6 cups of cabbage for Wednesday), cooked rice, salsa, and guacamole.

Wednesday: Not–Fried Rice — Mexican version (based on an Italian fried rice recipe but using cilantro instead of basil), made with leftover rice and chicken taco meat, plus kale or cabbage, bell peppers, onions, and any other vegetables you want to use up.

Thursday: Sweet potato nachos with vegan queso, and an avocado, jicama, and mango salad.

Friday: Spaghetti squash with pesto and shrimp, served with an arugula salad dressed with my everyday salad dressing. I sauté the shrimp in olive oil with garlic and crushed red pepper, cooking a few minutes on each side.

Saturday brunch: Oatmeal soufflé or whole-grain strawberry scones (best made the same day).

Sunday: Grilled skirt steak, roasted cauliflower, sautéed greens, and romesco sauce. I might make a little rice to go with it; if you’re plant-based, add cooked legumes like white beans to the sautéed greens.

Here are some make-ahead tasks to lighten your week:

Sunday:

  • Make stock
  • Roast and peel poblanos
  • Wash greens
  • Make salad dressings
  • Make pesto

Monday:

  • Prep slaw ingredients

Tuesday:

  • Make cheese sauce
  • Cut jicama and mango

Thursday:

  • Roast spaghetti squash

Friday:

  • Make romesco
  • Prepare the steak marinade
  • Wash and hull strawberries
