Cranberry, Prosciutto & Brie Phyllo Bites for Holiday Appetizers

Oozy, melted cheese with salty prosciutto and sweet-tart cranberries in a flaky pastry is a classic combination for a reason. These small filo (phyllo) cups are assembled in a mini muffin tin and bake up golden and irresistible.

Filo can dry out quickly, so keep unused sheets covered with a clean, damp towel while you work. Once you get the hang of it, these cups come together fast and disappear even faster at gatherings.

You need just a few simple ingredients to make these festive bites.

  • Filo (phyllo) pastry. Very thin, flaky sheets—cover with a damp towel to prevent drying while you work.
  • Brie. A creamy soft cheese that melts beautifully. Camembert, mozzarella, goat’s cheese or feta are good alternatives.
  • Prosciutto. Thin slices of prosciutto add a salty contrast; substitute bacon or ham, or omit for a vegetarian option.
  • Cranberry sauce. Use your favorite jarred or homemade cranberry sauce. Chutney, relish, or tart jam also work well.

How to Make Brie and Cranberry Bites

  1. Brush filo sheets with melted butter or olive oil, stack them, and cut into small rectangles for the cups.

Can I use a different pastry for the filo bites?

Yes. Puff pastry or wonton wrappers can be used instead—use a single sheet or wrapper per cup rather than overlapping multiple layers.

What other cheese could I use?

Camembert is the closest substitute. Mozzarella, feta, goat’s cheese, Boursin or cream cheese also work depending on the flavor you want.

Can I make the filo bites in advance?

Description

These brie, cranberry and prosciutto filo bites are an easy, festive snack that can be prepped ahead. Layer filo, add cranberry sauce, prosciutto and brie, then bake until golden and melty.


Ingredients

  • 3 sheets filo (phyllo) pastry
  • Butter or olive oil for greasing
  • 1/3 cup cranberry sauce
  • 1 small wheel brie, cut into cubes
  • 4 slices prosciutto, torn
  • 2 sprigs rosemary, chopped

Instructions

  1. Prepare the fillings. Preheat the oven to 350°F (180°C). Grease a mini muffin pan. Cut brie into small cubes and tear prosciutto into pieces. Stack filo sheets, brushing each layer with butter or oil. Cut the stack into rough rectangles about 2″ x 1″. Keep unused sheets covered with a damp towel.
  2. Assemble the cups. Press each filo rectangle into a muffin cup to form a shell. Add about 1 teaspoon cranberry sauce, a piece of prosciutto and a couple of brie cubes to each cup.
  3. Bake and finish. Bake for about 10 minutes until the pastry is crisp and the cheese is melted. Remove carefully from the tin, sprinkle with chopped rosemary, and serve hot.

Notes

Prep ahead: Assemble the cups in the tin a day ahead, cover tightly and refrigerate. Bake when ready or reheat baked cups at 300°F (150°C) for about 10 minutes.

Always keep exposed filo covered with a clean, damp towel to prevent it drying out. Swap cheeses or cured meats as desired, or use chutney or tart jam instead of cranberry sauce for different flavor profiles.
