HAPPY WEDNESDAY!
Mojitos are one of my favorite summer cocktails — they taste amazing and look beautiful. When I discovered this recipe, I instantly fell in love with it.
This salsa is the perfect combination of flavors: watermelon, cantaloupe, honeydew, fresh mint, lime, cilantro and red onion. It’s bright, refreshing and slightly sweet — ideal for summer gatherings. Serve with your favorite chips or bread. I love pita chips, but I recently found lime-flavored tortilla chips in the organic section that paired wonderfully with this salsa.

Mojito Melon Salsa

Ingredients
- 1 cup chopped watermelon
- 1 cup chopped cantaloupe
- 1 cup chopped honeydew
- 1/2 large cucumber, seeded and chopped
- 1/4 red onion, chopped
- 10–12 mint leaves, chopped
- 2 Tbsp chopped cilantro
- 2 limes, juiced
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Combine all ingredients in a bowl. Add the lime juice, salt, and pepper, then mix gently but thoroughly. Chill briefly if desired, and serve with chips or bread. Enjoy!
