Ingredients

  • cups blanched almond flour (not almond meal)
  • ¼ teaspoon celtic sea salt
  • ¼ teaspoon baking soda
  • 1 cup pecans, toasted and chopped
  • 5 tablespoons honey or agave nectar
  • ½ cup salted butter or palm shortening, melted
  • 1 tablespoon vanilla extract

Instructions

  • In a large bowl, combine the almond flour, salt, baking soda, and chopped toasted pecans.
  • In a small bowl, whisk together the honey, melted butter (or melted shortening), and vanilla until smooth.
  • Add the wet mixture to the dry ingredients and stir until a cohesive dough forms.
  • Place the dough in the center of a sheet of parchment paper and shape it into a log about 2½ inches in diameter.
  • Wrap the log and freeze for one hour, or until firm. Unwrap and slice into 1/8-inch thick rounds.
  • Arrange the slices on a parchment-lined baking sheet, spacing them slightly apart.
  • Bake at 350°F (175°C) for 7–10 minutes, or until the edges are just lightly golden.
  • Allow the cookies to cool for an hour to set before serving.
