  • 2 cups shredded cheddar cheese
  • 8 ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 4 ounces diced pimentos, drained
  • 1/2 teaspoon dried mustard
How to make Homemade Pimento Cheese:

1. In a mixing bowl, combine the shredded cheddar and softened cream cheese. Use an electric mixer on medium speed and blend for 2–3 minutes until well combined and slightly fluffy.

2. Add the mayonnaise and mix until smooth and creamy.

3. Stir in the garlic powder, paprika, onion powder, and dried mustard. Mix thoroughly so the seasonings are evenly distributed.

4. Fold in the drained diced pimentos until evenly incorporated.

5. Cover and refrigerate for at least 10–15 minutes to let the flavors meld. Serve chilled.

Full disclosure: I wasn’t always a fan. As a child the bright orange spread seemed odd to me, and I avoided it at gatherings. Over time I learned what pimentos were and, after trying a version at a local bistro, I finally appreciated how good pimento cheese can be — especially paired with fried green tomatoes.
