Chai-Spiced Cookie Recipe: Warm, Aromatic Baking Guide

I’m back in London and that means it’s time for Christmas baking. I always look forward to December 1st — the day it feels right to switch into full festive mode.

What does full festive mode look like? Think twinkling lights everywhere, classic (and delightfully cheesy) Christmas songs on repeat, at least one holiday movie a week, a fridge stocked with eggnog, and every beverage enjoyed from a Santa mug. And of course, baking — sometimes a little out of hand.

After two weeks on a hot beach I arrived home a little short on Christmas spirit. Driving past illuminated houses and setting up our tree while Michael Bublé played helped get me back into the mood. That’s when I started baking these chai cookies.

These Spiced Chai Cookies are wonderfully chewy with a fragrant chai flavour from a mix of cinnamon, ginger, cardamom, cloves, allspice and a touch of black pepper. If you enjoy chai tea or chai lattes, you’ll likely love these. I used festive cookie cutters, but simple squares or circles work just as well for year-round baking. They’re easy to make and can be ready in under 30 minutes, start to finish. If the dough softens while cutting shapes, chill it for 15–20 minutes — it becomes much easier to handle. Paleo Chai Spiced Cookies

Servings: 20 -25 cookies

Ingredients

  • 2 cups Almond Flour
  • 1/4 cup Coconut Flour
  • 1/2 tsp Baking Soda
  • 2 tsp Vanilla Extract
  • 1/3 cup Honey or other sweetener
  • 1/3 cup Melted butter or coconut oil
  • 2 tsp Cinnamon
  • 1 tsp Ground Ginger
  • 1 tsp Ground Cardamom
  • 1/2 tsp Ground Allspice
  • 1/2 tsp Ground Cloves
  • 1/2 tsp Ground Black Pepper

Instructions

  • Preheat oven to 175°C (350°F).
  • Place all ingredients in the bowl of an electric mixer and combine until a dough forms.
  • Shape the dough into a ball and place it on a large sheet of parchment paper.
  • Cover with another sheet of parchment and roll the dough to about 1/4 inch thickness.
  • Use cookie cutters to cut shapes. If the dough is too soft, chill it for 15–20 minutes before cutting.
  • Place cookies on a parchment-lined baking sheet and bake 8–10 minutes, until golden.
  • Remove from the oven, let cool slightly, then transfer to a wire rack. Store in an airtight container.
