The cure for boredom is curiosity. There is no cure for curiosity.

That quote perfectly sums up the kitchen experiments that lead to this recipe. After testing many combinations, I discovered that sunflower seed butter mixed with non-dairy yogurt gives an excellent, creamy base for a no-bake cheesecake. The sunflower butter provides richness and body so you don’t need added oils, and the yogurt adds tang, lightness, and a pleasant cultured flavor.

Sunflower seed butter is ideal here for several reasons: it makes the cake nut-free and dairy-free, removes the need for soaking or straining nuts, and avoids relying on coconut oil or other added fats. Because sunflower butter is already smooth, this recipe works well even with a modest blender. You can prepare the whole cake quickly—about 15 minutes of active prep if you’re familiar with no-bake cheesecakes—and then freeze to set.

This recipe is formulated for a small 5″ cake, perfect for two to four servings or for when you want a modest dessert. You can scale the ingredients up or down to make a larger or smaller cake. The method is straightforward and reliable, and the finished cake keeps well frozen—simply thaw slightly before serving for a perfect sliceable texture.

  • Category: Cake
  • Method: No-Bake
  • Cuisine: Dessert

Ingredients

Crust

  • ¾ cup pumpkin seeds (or another seed or nut if not avoiding nuts)
  • 4 soft Medjool dates, pitted
  • ½ tablespoon maple syrup

Filling

  • ¾ cup sunflower seed butter
  • ½ cup non-dairy yogurt (use an agave-sweetened yogurt for added sweetness, or use unsweetened yogurt and adjust sweetener)
  • 4 tablespoons maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon pure vanilla extract
  • ⅛ teaspoon salt

Optional Toppings

  • Edible dried rose buds, blue cornflower petals, or other decorative edible flowers

Instructions

  1. Process all crust ingredients in a food processor until they form a sticky, crumbly mixture. Press the mixture firmly into the bottom of a 5″ springform pan to form an even crust. Place the pan in the freezer while you prepare the filling.
  2. Combine all filling ingredients in a blender and blend until completely smooth. Pour the filling over the prepared crust and smooth the top with a spatula. Decorate with desired toppings.
  3. Return the cake to the freezer and allow it to set for 5–6 hours or overnight. When ready to serve, remove the cake from the pan, let it thaw slightly at room temperature for easier slicing, and enjoy. Store leftovers in the freezer and thaw slightly before serving.

Notes

This recipe is streamlined for convenience: no nut soaking, no straining, and no added oils. It’s a great option for anyone seeking a lighter, no-bake dessert that remains rich and satisfying. Adjust the sweetness to taste depending on the yogurt and sunflower butter you use. If you scale the recipe, ensure the filling-to-crust ratio stays balanced for best texture.
