Crispy Blackstone Bacon & Cranberry Brussels Sprouts Recipe

Ever since I made Blackstone Bacon Cranberry Brussel Sprouts, my love for Brussels sprouts has only grown. They’re such a simple, flavorful, and healthy side to cook on the griddle.

Yes, there’s bacon — but the Brussels sprouts bring lots of goodness, and the sweet-and-savory balance of bacon, honey, and cranberries makes this a crowd-pleaser that pairs well with many dinners.

It’s also great as a light lunch if you want something quick and satisfying.

How to make Blackstone Bacon Cranberry Brussel Sprouts

You’ll need: one pound of Brussels sprouts, 6–8 slices of bacon, one onion, 1/3 cup dried cranberries, 2–3 tablespoons honey, and about 1/3 cup crumbled goat cheese (or feta if you prefer). Kosher salt, black pepper, and crushed red pepper flakes finish the seasoning.

Begin by cutting the bacon into bite-sized pieces with kitchen scissors (6–8 slices). Shave or thinly slice the Brussels sprouts and dice the onion. Arrange everything on a tray to carry it to your Blackstone Griddle or flat top grill.

Preheat the griddle to medium. Add the bacon pieces and use hibachi spatulas to separate and turn them occasionally. After about 3–4 minutes, add the diced onion.

Add the sliced Brussels sprouts, kosher salt, pepper, and crushed red pepper flakes. Toss and flip with the spatulas frequently, cooking for about 6–8 minutes until the sprouts are tender and caramelized in spots.

Stir in the dried cranberries and drizzle 2–3 tablespoons of honey over the mixture. Cook another minute or two so the honey coats the sprouts and the cranberries warm through.

Finish with goat cheese crumbles

Remove from the griddle and top with crumbled goat cheese (or feta). I like to transfer everything back onto the tray I used to carry the ingredients out. Serve warm or at room temperature and taste for seasoning, adding more kosher salt and pepper if needed.

Instructions

  • Preheat the griddle to medium. Cut the bacon into bite-sized pieces and cook 3–4 minutes, stirring and flipping with hibachi spatulas to separate any pieces that stick together.
  • Add the onion, Brussels sprouts, kosher salt, pepper, and crushed red pepper flakes. Cook 6–8 minutes, flipping occasionally until the sprouts are tender and slightly caramelized.
  • Stir in the dried cranberries and honey. Cook another 1–2 minutes. Top with crumbled goat cheese or feta and serve. Taste and adjust seasoning as needed.
