Tropical Overnight Oatmeal

Servings 1

Ingredients

  • 1/2 c. rolled old-fashioned oats
  • 6 oz. container of coconut yogurt I used Liberte brand
  • 1/4 c. unsweetened coconut milk
  • pinch of nutmeg
  • 1 1/2 c. of fresh tropical fruit banana, mango, dragon fruit, kiwi, strawberries
  • 2 T. macadamia nuts

Start Cooking

Instructions

  • Combine the oats, coconut yogurt, coconut milk, and a pinch of nutmeg in a glass jar. Stir to combine, cover, and refrigerate overnight.
  • In the morning, stir the oats and transfer to a bowl. Top with fresh tropical fruit and macadamia nuts. Close your eyes and enjoy a quick taste of the beach.
