Hi, I’m Jolene from Yummy Inspirations and this is our second year participating in October Unprocessed.
I’m committed to giving my kids a natural, minimally processed diet. I notice a clear change in their moods when processed foods make an appearance, so I avoid them whenever possible.
I make most family meals from scratch. We don’t eat packaged breakfast cereals, and our lunch boxes are free from processed cheeses and other highly processed items. I prefer knowing exactly what goes into our food so meals provide real nourishment instead of empty, processed ingredients.
This Banana & Coconut Slice is a great example: a healthy kids’ snack that’s rich in natural flavors and nutrients. It uses simple ingredients like honey, coconut, oats, and banana, and it works well as a make-ahead breakfast slice or a lunchbox treat.
The first time I made these, my three-year-old asked if I’d really baked them — they were that good. They’ve become a family favorite and I’ve been making them about once a week. They never last long because the kids love them!

Ingredients
- 100 grams unsalted butter, 3.5 ounces
- ¼ cup honey
- 1 cup shredded/desiccated coconut
- ¾ cup rolled oats
- ¾ cup whole grain flour, or 1 cup gluten-free flour
- Pinch salt
- ½ cup mashed banana, from 1 large or 2 small bananas
- 1 teaspoon vanilla extract
Instructions

Preheat the oven to 180°C (350°F). Grease a 9 inch by 7 inch (23 cm by 17 cm) baking dish to prevent sticking.

Combine the butter and honey in a small saucepan and heat gently over low heat until melted.

Remove the melted butter and honey from the heat and set aside.

In a large bowl, mix the shredded coconut, rolled oats, flour, and a pinch of salt.

Add the mashed banana, vanilla, and the melted butter/honey mixture to the dry ingredients. Stir until evenly combined.

Press the mixture into the prepared dish and bake for 15–20 minutes, or until golden on top.

Allow the slice to cool in the pan before slicing — it firms up as it cools.
